Good food - good mood!
News from the Midas Bistro - Midas Pharma was looking for a new supplier for the daily lunch in the in-house bistro. Among other things, it was important to find a supplier from the Ingelheim area who offers balanced dishes and pays attention to regional products during preparation. The topic of sustainability should also be a factor.
Midas found Mr Holler, a passionate chef and owner of the Elder restaurant in Gau-Algesheim. Midas can now offer two daily changing menus for the employees.
Mr Holler also offers individual menus for our international guests, who are also catered for in the bistro. In order to give you an understanding of Mr Holler and his philosophy, we were allowed to interview him:
Mr Holler, please introduce yourself and your restaurant in a few words:
My name is Martin Holler and I have been running the Elder restaurant in Gau-Algesheim together with my wife since 2017. I completed my training as a chef 23 years ago in Mainz and have been working in this profession ever since. After working as a chef at various locations for several years, I finally opened my own restaurant.
What makes you unique, what kind of food do you offer?
We offer dishes of modern German cuisine, but also down-to-earth. I value portions that fill you up and, above all, that I know where my food comes from. That's why I attach great importance to fresh and regional products. Furthermore, I try to bring a lot of variety into the selection of my dishes. I like to be creative when cooking and try out new ingredients or combinations.
Do you value sustainability?
Absolutely! I hardly ever throw away any food, because I always produce fresh and only to order. I also try to use reusable dishes wherever possible and have already switched to reusable salad bowls for the Midas delivery, for example.
Do you have goals that you would like to realise in the future?
I would like to work even more sustainably in the future and produce even more food myself in the long term. I find the topic of handmade pasta very interesting and a pasta maker is one of the next things I will realise.
Various types of fruit should also be harvested from my own garden in the future. Another goal is that I would like to convert my delivery car to an electric car, but that will take some time.
